When my doctor told me in 2005 that I had insulin resistance I decided to change my diet. Since then all my meals have been made using low carb recipes and I have lost 70 pounds. Not only have I lost a lot of weight, I also no longer sleep all day and feel as tired as I used to, and a lot of the hair I lost because of hormonal imbalances (PCOS) have grown back.

A low carb diet, which the name implies, is a diet low in carbohydrates. There are many different low carb diets, ranging from low glycemic diets to no carb diets with a varying degree of fat. Just because a diet is low in carbohydrates it isn’t necessarily healthy.

Some people eat 500 calories a day with almost no carbs and they call it a low carb diet, needless to say that is not a healthy diet. I eat more vegetables than anyone I know and I try to eat balanced meals with proteins, fat and carbohydrates. A low carb diet usually contains somewhere between 20 and 100 grams of carbohydrate.

3 quick low carb recipes

– Omelette: 2 eggs, 4 pieces of ham, chopped onion, sliced pepper. Fry the omelette in butter or use extra virgin olive oil.

– Smoothie: 2 eggs, 1-2 tablespoons of extra virgin cooking oil (I prefer to use coconut oil), ¼ cup of cream, ½ cup of frozen raspberries (you can use other berries as well, but raspberries has less carbs), your choice of sweetener (I use stevia).

– Chicken with cauliflower rice: 1 fried chicken filet. Shred cauliflower into rice size and put it in a covered dish in your microwave for about 5 minutes. Serve with melted butter or homemade béarnaise.

One common argument against reducing the amount of carbohydrates is that once you revert to your old diet you will start gaining weight. Of course you will, this is a lifestyle, not a fad diet.
